Chicken Caesar Pocket Thins
Ingredients (1 serving)
  • 1 Brownberry Multicereales® roll
  • 1 medium chicken breast, cooked
  • 2 leaves of lettuce
  • 1/2 red bell pepper, sliced
  • 2 slices onion
  • 1 tbsp. Caesar dressing, low calorie
Directions

Preheat a nonstick griddle or skillet to medium-high. Grill each side of the chicken breast for 5 to 7 minutes, making sure chicken is thoroughly cooked. Split open the Pocket Thins® flatbread pocket and fill it with lettuce, sliced chicken breast, onion and bell peppers. Drizzle Caesar dressing over the top of the sandwich. Enjoy!

Directions

Tuna Nicoise Sandwich
Ingredients (1 serving)
  • 1 Brownberry Multicereales® roll
  • 4 oz. canned tuna
  • 1 tbsp. light Dijon vinaigrette
  • 1 tbsp. black olives, sliced
  • 1/2 c. arugula, loosely packed
  • 1/2 tomato, sliced
  • 1 tbsp. hummus
  • 1 hardboiled egg, sliced (optional)
  • salt and pepper to taste
Directions

Remove tuna from can and drain liquid completely. Mix the Dijon vinaigrette with tuna thoroughly. Place the tuna on the bottom half of Sandwich Thins roll. Add the sliced black olives, arugula, sliced tomatoes and hummus on top. Based on personal preference, add the sliced egg. Add salt and pepper for taste. Finally, cover sandwich with the top half of the Sandwich Thins roll.

  • 8 Brownberry Trigo con miel® ®

  • 1 cup cole slaw mix

  • 1 cup cooked quinoa, chilled
  • ½ cup edamame
  • ½ cup chopped nectarines
  • ½ cup chopped strawberries
  • ½ cup quartered grape tomatoes
  • 1 green onion sliced thin
  • 1 tbsp. fresh cilantro, minced

  • DRESSING
  • 1 oz. lime juice
  • 2 oz. olive oil
  • 1 tbsp. honey
  • 1 garlic clove, pressed
  • 1 tbsp. Dijon mustard
  • 1 t sea salt
  • ¼ tsp. dry basil
  • ¼ tsp. dry oregano
  • ¼ tsp. cumin
  • ⅛ tsp. cayenne pepper
Directions

Cook ½ cup dry quinoa in 1 cup water, bringing water to a boil, then simmer covered for 15-20 minutes. 

Cool then refrigerate. 

Cook edamame according to package instructions, then chill in ice water, and shell.  Prepare remaining salad ingredients.  Toss all ingredients into chilled quinoa.

Prepare dressing, mixing all ingredients in a bowl.  Pour over salad, and mix well. 

Chill then serve about ⅓ cup on Brownberry Trigo con miel® Honey Wheat Sandwich Thins, topped with cole slaw mix.  Serves 8.

Thai Cilantro Basil Lime and Ginger Chicken Breast Sandwich
Ingredients (1 serving)
  • 1 Brownberry Linaza y fibra® roll
  • 2 oz. uncooked boneless skinless chicken breast
  • ¼ cup cucumber slices
  • 2 Tbsp fresh basil, chopped
  • 2 Tbsp fresh cilantro, chopped
  • 1 Tbsp fresh lime juice
  • 1 Tsp finely chopped ginger root
  • 1/2 cup shredded carrots
  • 1 spray cooking spray
Directions

In a mini chopper or food processor, combine basil, cilantro, lime juice, ginger; pulse until smooth.
Add water, 1 teaspoon at a time, to thin sauce (if desired). Spoon sauce in a small bowl and add
carrots; toss to combine and set aside. Coat a grill or grill pan with cooking spray; preheat to
medium-high. Place chicken on grill and cook until browned and cooked through, flipping once,
