Portobello & Pesto Caprese Sandwich
Brownberry® Bread Sandwich Thins® Rolls
Portobello mushroom cap (marinade with Balsamic vinegar)
Tomato (sliced)
Fresh mozzarella (sliced)

Recipe Makes One Sandwich

First go ahead and prepare your Portobello mushroom cap to your choosing. Pour balsamic vinegar on top of it, and bake it in the oven at 400 degrees for 10-15 minutes. This gets the mushroom really packed with flavor and juicy.
Take your Sandwich Thins (which are already pre-sliced), and add the pesto. You don’ t need a lot, but adding pesto to both halves adds just the right amount of flavor. Gently place the Portobello mushroom cap on the bottom half of the sandwich. Add your slice of tomato and fresh spinach. Then top your sandwich off with a slice of fresh cut mozzarella! You can drizzle a little balsamic vinegar on top if you wish. This sandwich can be served either warm or room temperature.
