Creamy Chicken Curry Salad Sandwich

Ingredients (1 serving)
1/4 c. skinless chicken breast, cooked and cut into 1/2" cubes
1/6 (about 1/2 cup) medium celery stalk, cut into 1/4" thick slices
1/4 c. seedless red grapes, halved
2 tbsp. nonfat Greek yogurt
2/3 tsp. curry powder (or to taste)
black pepper to taste
2 leaves arugula
Directions 

In a large bowl combine chicken, celery, grapes, yogurt, curry, and pepper until well-coated to make chicken salad. Spread chicken salad onto a slice of bread then top with arugula and the second slice of bread.
