Holiday Inspired Turkey Grape Salad Sandwich

Ingredients (2 servings)
3 oz. roasted turkey breast
2 tbsp. low-fat mayo
6 medium green grapes
1 1/2 tbsp. walnuts, chopped
1 slice red onion, finely chopped
1 tsp. fresh parsley
2 large romaine lettuce leaves
Ground pepper to taste
Directions 

Take turkey and shred by hand to small pieces. Combine in medium bowl: turkey, grapes, walnuts, onion, parsley, mayo and pepper. Toast 2 slices Brownberry bread to desirable temperature. Place turkey salad evenly on both slices of bread and top each with romaine leaf.  Serve open-faced.

Nothing should be boring about leftovers. By adding grapes and walnuts, I have taken a simple turkey salad and invigorated it.
