Melty Gouda & Zucchini Panini

Ingredients (1 serving)
4 slices of zucchini, grilled
2 slices Gouda cheese
6 slices red pepper
1 tomato thinly sliced
1 c. mushrooms, sliced
1/2 c. basil
2 tbsp balsamic vinegar
Directions 

Grill two slices of zucchini and place on one bread slice. Layer Gouda cheese, red pepper, tomato, mushroom and basil on top of zucchini. Sprinkle the balsamic vinegar over the vegetables and place other bread slice on top. Heat skillet on medium heat. Toast sandwich until golden. Flip sandwich and cook until remaining side is golden.
