Soy Cheese, Onion & Spinach Sandwich

Spread spicy brown mustard on bread slices. Cover one slice of bread with spinach, one slice soy cheese and onion. Cover the other slice of bread with the other soy cheese slice and cucumber. Sprinkle cucumber with salt-free seasoning, if desired. Put the sandwich halves together and enjoy.
