  • 1 cup Greek yogurt
  • 1 tbsp pitaya powder (this is a super fruit that’s powdered and makes a vibrant pink color)
  • ½ grapefruit, peeled and sliced
  • 1 dragon fruit, halved
  • ½ cantaloupe
  • Mint leaves

  1. Preheat oven to 350 degrees.
  2. Place 4 slices of bread on a baking sheet and toast for 6-7 minutes.
  3. In a bowl, mix the Greek yogurt and pitaya powder.
  4. Using a melon baller, scoop out balls from the dragon fruit and cantaloupe.
  5. Once bread has toasted, remove from heat and let cool.
  6. Spread the yogurt mixture evenly on each toast, then top with the fruit balls,
