Ingredients
- 2 slices brownberry Whole Grains Oatnut Bread
- 2 sliced turkey bacon
- 2 cups fresh spinach
- 1/3 cup liquid egg whites
- Salt and pepper, to taste
Instructions
- Prepare turkey bacon in a small skillet on medium heat or microwave according to package instructions.
- When fully cooked, remove bacon, blot with a paper towel, cut pieces in half and set aside.
- In the same skillet, use non-stick cooking spray and add chopped spinach.
- Sauté spinach, remove from pan and set aside.
- Scramble egg whites and cook, set aside.
- Toast bread to desired crispness.
- Layer egg, spinach, and turkey bacon; cover with remaining slice of bread.
- Add salt and pepper, to taste.
