Rainbow Veggie Sandwich

Ingredients (1 Serving)
2 large leaves romaine lettuce
½ red pepper, chopped
¼ cup purple cabbage, shredded
½ cucumber, sliced
½ white onion, sliced
¼ cup sprouts
¼ cup fresh spinach leaves
1 large tomato, sliced thick
3 radishes, sliced
⅓ cup carrots, shredded
½ yellow pepper, chopped
½ avocado, sliced

1. Rinse vegetables thoroughly. Place 1 slice of bread on cutting board and top with romaine lettuce, chopped red pepper, shredded purple cabbage, sliced cucumber, sliced onion and sprouts.

2. Cap with second bread slice, and top with spinach leaves, sliced tomato, sliced radishes, shredded carrots, chopped yellow pepper and sliced avocado.

3. Top with remaining bread slice and enjoy!
