Beet and Feta Toast

Ingredients

  • 2 slices of Brownberry White bread
  • 6 oz of beets; cooked
  • 1 tbsp. extra virgin olive oil
  • 1 tsp. fresh orange or lemon juice
  • 2 tsp. vinegar
  • 3 oz. feta; crumbled
  • orange zest; for garnish

Directions

  1. Mix together olive oil, orange juice, and vinegar in a medium mixing bowl.
  2. Dice beets and fold into mixture.
  3. Smash all ingredients together using a fork or potato masher.
  4. Add in feta cheese and season with pepper, if desired.
  5. Place beet and cheese mixture on 4 slices of toasted bread and top with orange zest.
  6. Serve and enjoy!
