Egg-staordinary Salad Sandwich

Ingredients

  • 4 slices of brownberry Oatnut bread
  • 4 hard-boiled eggs, sliced and diced
  • 2 radishes, diced fine
  • 1 stalk of celery, diced
  • 1 carrot, shredded and diced
  • 3 tbsp. reduced fat mayonnaise
  • 1 tsp. Dijon mustard
  • 1/2 tsp. dill weed, diced fine
  • salt and pepper to taste
  • romaine lettuce
  • sliced tomato

Instructions

  1. Mix all ingredients except lettuce and tomato together until creamy and smooth.
  2. Place lettuce and tomato on one slice of bread.
  3. Top with half of the mixture.
  4. Place second slice of bread on top.
  5. Repeat above steps for the second sandwich.
