Ingredients

2 Brownberry 100% Whole Wheat Sandwich Thins rolls

½ avocado, mashed

1 teaspoon lemon juice

1 teaspoon kosher salt

2 leaves romaine lettuce

¼ cup fresh spinach
-
¼ cup cucumber, sliced

¼ cup green peppers, sliced

1 tablespoon cilantro, minced
Directions
- Lightly toast Sandwich Thins rolls.
- In a small bowl, combine avocado, lemon juice and salt.
- Spread avocado mash onto Sandwich Thins bottoms.
- Layer on lettuce, spinach, cucumber, peppers and cilantro.
- Top with toasted Sandwich Thins roll lids.
- Enjoy!
