Sloppy Chicken Joe Sandwich

Ingredients

  • 2 Brownberry Multigrain Sandwich Thins rolls
  • 8 ounces kidney beans
  • 2 tablespoons tomato, diced
  • 2 green chiles, minced
  • 1 tablespoon chili powder
  • 1 tablespoon green onion, chopped & divided
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes
  • 8 ounces onions, diced
  • 1 teaspoon cayenne
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 16 ounces chicken, cooked and shredded
  • 2 tablespoons Cheddar cheese, shredded

Directions

  1. 1. In a medium pot over low heat, combine kidney beans, diced tomatoes, minced green chilies, chili powder, ½ tablespoon green onions, cumin, paprika, red pepper flakes, diced onions, cayenne, salt and pepper.
  2. Stir until well combined (approximately 3-5 minutes).
  3. Add in chicken and simmer until hot, stirring occasionally (approximately 3-5 minutes).
  4. 2. Place desired amount of chicken mixture on each Sandwich Thins bottom, and sprinkle with 1 tablespoon of cheese and remaining green onions.
  5. Cap with Sandwich Thins lids and enjoy!
