Ingredients

2 slices Brownberry Healthnut bread

2 tsp. (1 tsp. on each side) spicy brown mustard

1/4 c. spinach leaves, washed

2 slices soy cheese
-
1/4 small red onion, thinly sliced
-
1/4 small cucumber, washed and thinly sliced
-
salt-free seasoning to taste (optional)
Directions
- Spread spicy brown mustard on two Brownberry Health Nut bread slices.
- Cover one slice of bread with spinach, one slice soy cheese and onion.
- Cover the other slice of bread with the other soy cheese slice and cucumber.
- Sprinkle cucumber with salt-free seasoning, if desired. Put the sandwich halves together and enjoy.
