Ingredients

2 Brownberry Multigrain Sandwich Thins rolls

1/4 cup nonfat plain Greek yogurt

1/4 cup Thai sweet chili sauce

1/2 teaspoon fresh orange or lime juice

3/4 cup chopped cooked chicken breast
-
1/4 cup chopped ripe mango
-
3 tablespoons grated carrots
-
3 tablespoons thinly sliced celery
-
2 1/2 tablespoons chopped red bell pepper
-
2 tablespoons chopped cashews
-
1-1/2 tablespoons thinly sliced green onion
-
1 tablespoon chopped Thai basil or cilantro

1/2 cup packed baby greens or baby spinach

6 thin slices seedless cucumber
Directions
- Stir together yogurt, sweet chili sauce and juice in medium bowl. (Remove and reserve 2 tablespoons.)
- Stir in chicken, mango, carrots, celery, bell pepper, cashews, onion and basil (or cilantro); mixing to combine.
- Spread reserved yogurt mixture on cut sides of the Sandwich Thins rolls.
- Layer the greens evenly on the bottom halves of the rolls.
- Top each with 1/2 the chicken mixture and cucumber slices.
- Add the top halves of the rolls.
- Enjoy!
